Low GI diet recipe – Spicy Beans with Sweet Potato Jackets

So we’re back on the diet, it’s only taken about 6 months, a house move, a lot of biscuits and some wailing over the scales but we’re back on it. A few days in and I am dreaming about butter but I have lost a pound already (I know I shouldn’t weigh myself that often) so it’s doing something.

We’re doing the GI diet again (well my version of it) as I don’t feel too restricted and it seemed to give me loads of energy last time. We shall see how it goes. So the quest for interesting meals begins, the first recipe on my repertoire as follows…

Spicy Beans with Sweet Potato Jackets

Serves 4

8 small sweet potatoes, washed and scrubbed
1 tsp olive oil
2 garlic cloves
1 onion, finely chopped
1 chilli, finely chopped (I left the seeds in but it was HOT)
1 tbsp white wine vinegar
1 tsp Worcestershire sauce
4 rashers lean bacon, diced
1 400g tin chopped tomatoes
1 350g tin cannelini beans, drained and rinsed
Handful of fresh coriander, finely chopped
Grated cheese to serve (I used Cheddar)

1. Preheat the oven to 200 degrees C.
2. Lightly wet the potatoes and prick all over. Put on a baking tray and season, rolling the potatoes around to catch all the salt and pepper.
3. Put the potatoes in the oven for 1-1 1/2 hours, till soft inside when poked with a fork and crispy on the outside.
4. Meanwhile, add the olive oil to a saucepan, once hot, add the onions and fry until softened.
5. Add the garlic and chilli and fry for 2-3 minutes.

6. Reduce the heat and add the vinegar and worcestershire sauce, cooking until the liquid has mostly gone.
7. Add the bacon and stir to combine, cook for 2 minutes.

7. Add the tomatoes, bring to the boil and simmer for 10 minutes.

8. Add the beans, stir to combine and cook through for 2-3 minutes until the beans are warm.

9. Turn off the heat and add the coriander, stir to combine. Check for seasoning, I didn’t add any to be honest, but you might want to!
10. Slice the potatoes in half, two per person and top with a couple of spoonfuls of mixture.
11. Sprinkle a little cheese on top and you’re done (I didn’t have any cheese as I’m trying to be virtuous!)

The bathroom is (nearly) finished!

So we finally managed to put up the shelves in the bathroom meaning that the only thing left to do in there is repaint the walls – I HATE the insipid yellow that the developer painted them and have my eye on a bright lime green – it’s a small room I know but it’ll cheer us up in the mornings! ;)

We bought Ikea’s GRUNTAL shelves which were pretty good value for money actually – quite hefty chunks of glass – even if they don’t give you ANY of the stuff you need to put it on a wall!

I also want to get some charcoal grey towels but am having trouble finding one large enough for Mr B’s exacting standards and the right colour for mine. Might just have to bite the bullet and buy the gorgeous ones I saw in House of Fraser…

Anyway, the shelves are great – really pleased with them and I even got approval for my measuring – completely level!

Tagxedo – Most definitely for word geeks!

As I was scanning through my Google Alerts I came across this piece from the lovely ‘liza jane sews‘ about the great site Tagxedo, where you can enter a URL and create a visual of the content – in the shape of a whale if you really want!

I’ve used it for work a few times and spend many hours in my own little Powerpoint nightmare trying to reproduce one in animation but I hadn’t done one all of my own – with my words and my content – not boring food science!

You can play around with colours and shapes and fonts to your hearts content…so I did :)

I love M is for make! Lots of lovely new fabric…

I was a little naughty and bought a fair bit of fabric from the most excellent m is for make, I’ve got plans for the material so it wasn’t completely frivolous, if I keep telling myself that it’s almost true! ;) I was so impressed with the range of gorgeous fabric that m is for make have and the speed with which I received my order (next day) I will most definitely be using them again! :)

My weekend in pictures – New shoes, purple carrots and a sofa

The floors are done…

So Mr B and I decided about a month ago that we hated the carpets in our new place and in fact weren’t that keen on carpets full stop. So I looked around for a machine to do the sanding and found this fantastic place in London where they provide ‘dustless’ floor sanders which prevent 99.9% of the dust coming out making it a much less painful exercise when sanding your floors! I was skeptical (how unusual) and others doubted (mentioning no names) and we had to go to Ealing to pick them up but they were so worth the effort. Unbelievably loud and Mr B and are still not hearing properly, just keep shouting at each other ;) but the people at the sanding place were really friendly and helpful and the equipment did the job superbly so I am very chuffed with our two days of solid hard work – it was dust free but not effort free! We sanded with 4 grades of paper, filled gaps, varnished, sanded between coats and generally ruined the general condition of our knees but I think that our floors look awesome :) Worth all the hard work…

Now we’ve just got a lot of work to do decorating and our house will be lovely :) Grey blue in the lounge, pale grey in the hall, dining room and kitchen and then bright green in the bathroom which we are hopefully doing this weekend. It’ll all be nicely finished in time for Christmas I hope!

We’ve got the sofa coming on Friday though which is what I’m most looking forward to as we’ve not had one for the last 4 months, since selling our massive one as it would never have fit in the new house. So from Friday I will mostly be comatose on my new purchase from IKEA…

Hoppin Toad in the Hole from Mr B

So Mr B cooked me an awesome dinner last night from Levi Roots’ Spice it Up, his Hoppin’ Toad in the Hole. I was a little skeptical of the idea of adding chilli to one of my favourite dinners but it was delicious and even looked a lot like it was supposed to! I’ve even got leftovers for lunch – I think there’s nothing better than having something delicious waiting for you in the fridge at work whilst you’re counting the hours till you can go home! ;)

The awesome Mr Levi Roots comes through again!

Well I had a LOVELY weekend, primarily because it involved NO DIY :) Thank you! But also because I had a lovely time with our friends on Saturday night, far too much was drunk but the food went down very nicely and mostly thank to the lovely Mr Roots.

Having watched him  chirping away about Reggae Reggae sauce oh so many years ago on Dragons Den I have still to actually buy any of the sauce and haven’t even tried it, unless you could sticking my finger in my Mum and Dad’s bottle and 2 in the morning – sorry! :) So when I bought his second cook book for Mr B last year it was an impulse purchase – one I’m glad I made! Since then Mr B has made me some of his AWESOME rack of lamb in cherry sauce and some roast banana ice cream which was…good if you like bananas? I have a bit of a love/hate relationship…add peanut butter to the equation and I’m happy…hmmmmm. Anyway, back to the subject at hand – Mr Roots. Food for Friends is full of recipes with huge amounts of flavour but using reasonably cheap cuts of meat or no meat at all in many instances. I decided for the first dinner party in our new house that I would use his book to the full and ended up making an entirely Levi meal. Wouldn’t he be proud?

So we started with lime daiquiris…except I was short on some lime so added some pineapple juice left over from one of the marinades – the drink definitely didn’t suffer and you could still taste the 3 shots of rum he suggested per person – wooo hoo, they went down nicely ;) Then we had some Roasted (Levi) Roots Soup which was SO easy to make, completely vegetarian and PACKED with flavour. Definitely one I’d make again. Then we made Sticky Jerk ribs (using mango chutney, pineapple juice and LOTS of cumin) with BBQ Mojo chicken (citrusy and spicy), roasted Butternut Squash, Peanut and Spinach salad (tangy, sweet and nutty) and green cuban rice (packed with coriander and parsley). All of which I would make again most definitely, though perhaps I wouldn’t make Mr B BBQ in the dark – he took to the challenge very well but not being able to see the food you’re cooking is one handicap to far I think!

We then finished with Mr B’s version of Levi’s Spiced Stout Ice cream made entirely by his fair hand, it was deliciously cinnamony (or some word like that) with a good smack of rum :) What’s a pudding without rum? We did cheat a little with bought brownies as I’d decided by then that we’d made enough. I probably would again as well though maybe heat them a little so they’re a little more gooey with the icecream….mouth’s watering!

So all in all a lovely evening with some great company (thank you for coming guys!) and some very enjoyable food from my end – hopefully it went down well!

I’d also completely forgotten that I’d already ordered the next book in his range – Spice it Up – which arrived at work yesterday just as I’d reached the depths of Monday despair – just in time for me to pick something for dinner! Without having to buy anything – so many of the recipes use stuff I keep in my cupboard anyway, we put together his Mustardy Macaroni Cheese for dinner last night…ok I cheated a little as I hate macaroni pasta and used some huge shells I had…and I used Dijon instead of grain mustard…and I used more milk instead of cream…and I added spinach…so it was kind of his recipe! When do I ever follow a recipe properly though?

I think Mr B is now going to make us his spicy version of toad in the hole tonight so it’s another evening of Levi delights. I think Mr B has a man crush – Jamie will be jealous! ;)
