Meat free week – Day two

Seeing as I completely forgot to take a picture of the lentil and squash curry Mr B cooked me as I was too busy wolfing it down, I thought I’d share a little peek at some of the things I’ve been making for my shop…felt flower brooches with vintage button centers.

Most awesome ribeye steaks – Friday nightastic

On Friday I decided to treat us to some MASSIVE steaks from our local butchers for dinner to serve with some spicy potatoes and green salad…but then I got them home and realised they needed something more to do them justice – a little Googling later and the lovely Coconut Raita provided me with an excellent recipe for coriander pesto that more than did the steaks justice.

Recipe – Super Summer Soup: good for colds!

So I felt rubbish the other day, like my cold had finally got the better of me – after 6 weeks of a cough I wouldn’t be surprised! Anyway, I thought we needed something soothing and warming for dinner which also required the least amount of effort – the summer soup was born.

Perfect with some crusty white bread and a huge glass of red wine – I felt positively well afterwards – an excellent cold cure (plus alcohol ALWAYS helps!).

Summer Soup recipe

1 white onion, finely chopped
1 courgette, finely diced
1 summer squash, peeled and finely diced
1tsp garlic puree
2 pints stock (I used a chicken stock cube)
1 tin chopped tomatoes
1tsp dried oregano
1tsp dried thyme
red wine vinegar
salt and pepper

1. Heat some oil in a large saucepan and add the onions once it starts to thin.
2. Fry the onions on a low heat till they start to become translucent, add the garlic, fry for 1 minute.
3. Add the courgette and fry for 2 minutes until softened.

4. Add the thyme and oregano.
5. Add the summer squash and fry for 2 minutes.

5. Add the stock and the tin of tomatos, stir to combine and bring to the boil.
6. Add a dash of red wine vinegar and season to taste – this took a lot of salt so be warned!

Recipe – Simple tomato ‘concasse’ pasta

I hear you ask, what on earth is concasse? I have no idea…but it tasted good!

Basically, we were feeling lazy, had no idea what to have for dinner, I had some fresh tomatoes left over from my box, some lovely basil we’d bought to feed Betty – she wouldn’t know if we borrowed some -and a craving for a filling, simple pasta dish. Google here I come!

In the end we used the tomato ‘concasse’ recipe from Michael Caines (of the hugely delicate goatee) I found online with no changes – unusual for me I know. Mr B found it simple and easy to put together, even with me heckling from the corner of the kitchen!
