Recipe – Made up Enchiladas: Bean-tastic and delicious!

I made this up to suit my craving for ‘wraps’ and what I had in the fridge and hadn’t got a recipe, just improvised as I went along but it was so tasty that I just had to take a few pictures and share the recipe with you in case you fancied a spot of the action.
Jo’s Made up Enchiladas
Serves 4
4 large wheat tortillas
2 cooked chicken breasts, shredded or 2 handfuls of chicken breast meat (leftover from my Sunday roast!)
1/2 red pepper, diced
1/2 green pepper, diced
1 leek, finely sliced
1 tsp garlic puree
1 tsp dried oregano
1 tsp dried thyme
1 tsp ground coriander
1/2 jar salsa or 1/2 tin chopped tomatoes
1 tin cannellini beans, drained and rinsed
4 tbsps plain yoghurt
50g mature cheddar

1. Put a frying pan on a medium heat and add a little vegetable oil.

2. Once the oil starts to thin add the peppers and leek, fry for 2 minutes until softened.
3. Add the garlic and fry for 1 more minute.
4. Add the salsa/tomatoes, oregano, thyme and coriander. Cook, stirring, for 2 minutes.
5. Add the shredded chicken and beans, stir to combine and cook for 1 minute.
6. Remove from the heat.
7. Lightly oil the bottom of a casserole dish.
8. Take a tortilla and place 3 large spoonfuls of the mixture in the centre, fold up both sides to the centre and then the two remaining sides to the centre to make a parcel.
9. Place the parcel, open side down, into the casserole dish.
10. Repeat the same process with the other wraps until they are all in the dish.
11. Spoon the yoghurt on top of the folded wraps and grate the cheese over the top.
12. Bake in the oven at 200 degrees C for 25 minutes until nicely browned on top.
13. Serve with a green salad and enjoy!
